What is Haggis?
Haggis is a traditional scottish cuisine eaten on traditional Scottish days, such as Burn's night with Whisky. It is a savoury meal which is made of sheep's heart, liver and lungs usually and is mixed with onion, oatmeal, suet and spices. The whole thing is then encased in sheep's stomach (or a more modern casing) and boiled for around 3 hours. This is then served with mashed neeps and tatties (turnips and potatoes).
It may sound awful, but trust us it has a wonderful nutty and spicy taste that you must try at least once in your life! A modern non-meat version has even been created if you are a vegetarian which is made with spices, lentils, stock and kidney beans.
The first known written recipe actually originates from Lancashire, not Scotland. However there is a lack of historical evidence to conclusively say where it originated from.
Additional facts about Haggis
It is not an actual animal with it's two inside legs shorter than it's two outside legs to allow it to run along the hillside easier! Although there is an annual Haggis Hunt run for fun, a haggis is not a real animal running through the Scottish highlands!
Haggis is illegal in the US because they have banned any food containing sheep lung. They used to think the contents could potentially be lethal. They have been considering lifting the ban but have not done so yet.

When you arrive in Edinburgh, Scotland, the castle is one of the most striking features. Apparently growing out of the rock itself, the plug of basalt that was once the tip of volcano was left standing as a glacier removed the softer rock around it. Not surprisingly the rock has had a castle on for well over a thousand years and was a royal palace since David I in the 12th century.
